Chicken Parmigiana

We are pretty proud of our take on the classic ‘parmi’. Think succulent and tender chicken thigh wrapped around a rich tomato and herb sauce and vintage cheese, then coated with a herb and garlic natural Ciabatta breadcrumb for extra flavour. It’s a parmi with a twist!

Cooking Instructions

Heat oil in a pan over medium heat.

Add parmigiana into pan and cook. Cover with lid to prevent drying out.

Turn after approximately 10 minutes.

TIP: If using a thermometer, cook to a core temperature of 75°C.

Cook for a further 10 minutes.

Once cooked, allow to stand for a few minutes before serving.

Pre-heat oven to 180°C (conventional).

Place parmigiana onto grease proof paper on an oven-proof tray. Spray with a small amount of Olive Oil.

Once oven is heated place parmigiana in oven and bake for 30 minutes.

TIP: If using a thermometer, cook to a core temperature of 75°C.

Once cooked, allow to stand for a few minutes before serving.
