Chicken Parmigianas

We are pretty proud of our take on the classic ‘parmi’. Think succulent and tender chicken thigh wrapped around a rich tomato and herb sauce and vintage cheese, then coated with herb and garlic natural Ciabatta breadcrumbs for extra flavour. It’s a parmi with a twist!

cooking instructions

Stove – Cooking Temp: Med – Cooking Time: 20-25 mins – Serves: 1

Heat oil in a pan over medium heat.

Add parmigianas into pan and cook. Cover with lid to prevent drying out.

Turn after approximately 10-15 minutes.

Once cooked, allow to stand for five minutes before serving.

TIP: If using a thermometer, cook to a core temperature of 75°C.

Oven – Cooking Temp: 180 ℃ – Cooking Time: 25-30 mins – Serves: 1

Pre-heat oven to 180°C.

Place parmigianas onto grease proof paper on an oven-proof tray. Spray with a small amount of olive oil.

Once oven is heated, place parmigianas in oven and cook for 25-30 minutes.

Once cooked, allow to stand for five minutes before serving.

TIP: If using a thermometer, cook to a core temperature of 75°C.
