Pre-heat oven to 180°C (fan forced).
Boil potatoes in a pot for 10-15 minutes or until soft.
Cook bacon in a pan until crispy. Remove from heat and set aside.
Place potatoes, bacon, garlic, parsley, cream, sour cream and half a cup of mozzarella cheese into a large mixing bowl and combine.
Place mixture into an ovenproof dish and add remaining cheese on top.
Bake in the oven for 30 minutes or until cheese is golden.
