Parmesan & Honey Carrots

Instructions

Pre-heat oven to 200°C.

Peel carrots. Place carrots in a mixing bowl, add a splash of olive oil, thyme and salt and pepper, combine all together.

Lay carrots on an oiled baking tray and place in oven. Cook for approximately 15 minutes.

While carrots are cooking, make sauce by cooking sliced schallots, chopped garlic and salt and pepper in a pan at a medium temperature for five minutes.

Add thyme to pan and stir through. Then add honey and cook on a high heat for a few minutes.

Add butter into pan and stir until completely melted. Add lemon juice and more salt and pepper if needed.

Place cooked carrots on a serving platter.

Spoon sauce over carrots and top with shaved parmesan.
