Heat olive oil in frying pan over medium heat. Sear Schnitzels for 6 mins each side, remove from heat and set aside.
Cook bacon rashers in the same pan as the Schnitzels.
Place seared Schnitzels on a baking tray, lay 3 slices of tomato, half a bacon rasher and 1 slice of cheese on each Schnitzel.
Layer with second Schnitzel, top with an extra slice of cheese and cook in the oven for 4 mins at 180°C.
Season with salt and pepper to serve.
