Preheat oven to 180°C (fan forced). Place Schnitzels on an oven proof tray and cook for 25 mins.
In a large mixing bowl, combine mangoes, capsicum, red onion and jalapeno to make the salsa.
Squeeze lime juice liberally over salsa ingredients.
Spoon mango salsa over each Schnitzel to serve.
