Ratatouille Salad with Marinated Fetta

Instructions

Preheat oven to 200°C. Line a baking tray with non-stick baking paper. Set aside.

Place all the ingredients in large mixing bowl. Drizzle over olive oil. Add extra if desired.

Season generously with salt and pepper and toss until all ingredients are covered with oil.

Place in the baking pan. Roast in oven for 40 mins or until tender.

Garnish and serve immediately.
