Add frozen vegetables to a shallow bowl of cold water to defrost. Once defrosted, drain and set aside.
Heat half the olive oil in a frying pan over medium heat. Pour in beaten eggs and cook like an omelette. Once cooked, dice into pieces.
Heat the remaining olive oil in a frying pan over medium-high heat, add onions and cook for 2-3 mins.
Place diced chicken thigh in a bowl, pour over chicken stock and toss to coat.
Add chicken to frying pan and cook for 8-10 mins, turning occasionally until onions are tender and chicken is cooked through.
Add the thawed vegetables to the chicken, stir through and cook for a further 2 mins or until vegetables are warm.
Heat up Microwave rice, put in large mixing bowl with diced omelette, stir to combine and add to chicken and vegetable mix.
Add the Sweet Chilli & Soy sauce to the frying pan and stir through to combine. Serve and enjoy.
TIP: If using in kids lunch boxes, allow to cool before portioning.
