Chicken Breast Schnitzel

This delicious Chicken Breast Schnitzel is ideal for those that want something a little more hearty than the traditional schnitzel made from thigh. Coated in a natural Ciabatta breadcrumb, it’s great cooked in the oven and served with a salad or mashed potato, or as a satisfying sandwich or burger.

Cooking Instructions

Heat oil in a pan over medium heat.

Add schnitzel into pan and cook. Cover with lid to prevent drying out.

Turn after approximately 8 minutes.

Cook for a further 8 minutes.

TIP: If using a thermometer, cook to a core temperature of 75°C.

Once cooked, allow to stand for a few minutes before serving.

Pre-heat oven to 180°C (conventional).

Place schnitzel onto grease proof paper on an oven-proof tray. Spray with a small amount of olive oil.

Once oven is heated place schnitzel in oven and bake for 20 minutes.

Once cooked, allow to stand for a few minutes before serving.

TIP: If using a thermometer, cook to a core temperature of 75°C.

TIP: Turn at half way to ensure crumb remains crispy on both sides.
